Tasting Notes. Layered and complex, a nice mix of fruit and spices. You start out with notes of cassis, black cherries, blueberries, and a cooling menthol effect. Interwoven are aromas of toasted oak, vanillin, sagebrush, coco powder, caramel, brown baking spices, and dried herbs. The palate is full of plush mouth coating tannins that mingle with fruity notes of plum, blackberry, and chocolate covered cherries. The wine shows great balance and with all its complexity promises to be a real crowd pleaser.
Aging: 26 months 50% in New American Oak Barrels
Food Pairing: Pair with a double smash burger with cheese, topped with caramelized onions, all the fixings and classic "special sauce." Or for a twist try switching to ground lamb, but keep it smashed on the flat top for the crispy char.
