Tasting Notes: With a stone-vaulted winery within the castle walls, Castello di Bolgheri makes wines that appeal to those who look for classic and traditional lines. A blend of mostly Cabernet Sauvignon with small elements of Cabernet Franc and Merlot this wine boasts beautiful integration and soft lines that frame black fruit, spice and campfire ash. This wine holds back just a bit in terms of ripeness, and that explains the smooth elegance you get here. This is a special wine.

Aging:  18 months in 500 liters oak barrels.

Winemaking:  Take place in stainless steel tank, and part as well in oak tank and open barrels. Long maceration on the skins especially for the Cabernet Sauvignon, 30 days; 20 days for Merlot and Cabernet Franc to preserve more the elegance of the tannins. Fermented with indigenous yeast.

Food Pairing: Red meats, hearty chicken, red sauce with pasta.
